Paleo butternut squash casserole

 
What is thanksgiving without a good casserole? You will need: 1 butternut squash, 3/4 cup maple syrup, 1/2 tsp cinnamon, 1/8 tsp nutmeg, 1/4 cup coconut oil, 1/2 tsp vanilla, 3 eggs, slightly beaten, Salt Pecan halves. Start by peeling your squash, cut it in half and remove the seeds. Next cut into cubes. Boil squash pieces in salted water for 25 minutes. Drain and mash. Add syrup, spices, and coconut oil and beat on medium. Next, add eggs, vanilla, dash of salt, and beat for a few more seconds. Pour mixture into a lightly greased baking dish. Garnish with pecan halves. Bake at 350 for 40-45 minutes.
