Paleo fudge

 
It was a crazy, busy weekend. My youngest son and daughter were sick with the stomach bug on Thursday and Friday, we had a crossfit competition in Lafayette all day Saturday, and came home to my third child sick with the stomach bug Saturday night. So today, despite being so sore I can hardly walk, we are feeling better. We ate some left over gumbo ( which by the way is even better after a day) over a sweet potato for dinner, and then I made this fudge for a treate. To make the fudge you will need: 3/4 cup almond butter, 1/2 cup coconut oil, 1/4 cup honey, 1/2 cup cocoa powder, 1/2 tsp vanilla, 1/2 cup unsweetened coconut flakes, 1/2 cup 70% dark chocolate chips, 1/4 cup coconut butter, Pinch of salt. Start by melting almond butter, coconut oil, and honey together over medium heat in a saucepan. Next add cocoa powder and vanilla and mix together. Keeping it on low heat add coconut flakes, dark chocolate chips, coconut butter, and pinch of salt. Once it is all combined, pour in a 9x9 baking dish that is lined in parchment paper. Refrigerate for 2-3 hours and then enjoy.
