Today we went over to a friends for a BBQ. I decided to bring an appetizer, and you can't go wrong with this sweet potato hummus. The kids and the adults like it. Its great served with carrots, celery, sweet potato chips, and you can even use it with lettuce, turkey and tomato in a lunch wrap.
1 pound of sweet potatoes (2 or 3 regular size potatoes)
1/4 cup fresh lemon juice
1/4 cup tahini
2 teaspoons olive oil
2 teaspoons ground cumin
1 garlic clove, finely chopped
salt and pepper
Preheat the oven to 350, place sweet potatoes on a baking sheet and bake until soft (about an hour).
cool and peel potatoes
Transfer potatoes to a food processor: add lemon juice, tahini, oil, cumin, garlic, salt and pepper.
puree until smooth. Let cool and serve
