So this recipe is not full paleo ( the pesto has cheese in it), but I couldn't resist sharing it. It was too easy, and too good not to.
I have been searching for more crockpot meals since school started. I found this one and it looked so easy and good. I let it cook while kids were at school. We served it over spaghetti squash, and everyone loved it.
To make:
2-3 lbs boneless chicken thighs
1 6oz jar store bought pesto
1 tsp dried parsley
3/4 tsp black pepper
1 tsp season salt
1/2 tsp garlic powder
1/4 tsp onion powder
1/8 tsp thyme
1/2 cup chicken broth
1. Place chicken in crockpot
2. Top with seasoning, pesto, and chicken broth
3. Cook on low 6 hours.
4. Serve over spaghetti squash.
