This weekend is a special weekend at crossfit Alexandria. Olympic weightlifter Natalie Burgener is in town to give a class at our gym. Yesterday, my husband and I got to have a private class with her and all day today we will spend learning from her as well.There are 25 other crossfitters from around the state coming in to take the class also. Last night a group from crossfit had a paleo potluck to welcome her. She is an incredible athlete, and one of the cutest, nicest people. I know that my one hour session with her has already helped my Olympic lifting, there's no telling what a full day of learning with her will do.
I always get so amazed at some of the delicious paleo meals people come up with to bring to paleo functions. I always get great ideas of new things to cook. Just a few of the things we had last night include sweet potato/ plantain/ apple bake, baked Brussels sprouts, squash casserole, grilled chicken, boiled shrimp, sausage, chorizo meatballs, grilled salmon, and paleo cookies. The food was all delicious and I will be getting a few of the recipes to share with you. Right now, I'm off to get in a run before my day of Olympic lifting. It's going to be a great day to learn.
