I woke up this morning extremely sore from a combination of my 8 mile run and all day Olympic lifting class. I was also starving. I've been wanting to try these egg muffins out. I wish I would of had a few more veggies to put in them, but I just worked with what I had. I used what I had in my refrigerator to make them. Squash, zucchini, or bell peppers would be great added to them as well.
You will need
6 pieces of cooked bacon, chopped
1/2 chopped purple onion
8 eggs
Cherry tomatoes chopped
Salt and pepper
Toni's seasoning
Preheat oven 350. Mix onions, tomatoes, eggs, cooked bacon, salt and pepper, and Toni's. Pour egg mixture into greased muffin tins. Bake for 20 minutes. Top with salsa or fresh pico.
