We have a local kitchen store that just started doing a paleo meal plan. It has been a wonderful thing for so many people that want to eat paleo, but don't cook. Which,I have found is quite a lot of people. I decided to sign up for the meal plan for a week just to try it out. After all, I do love trying any new paleo food. Some of the items on the menu this week have been sweet potato pasta with shrimp and veggies, stuffed acorn squash, burgers with sautéed onions, and chicken florentine. The burgers had cole slaw on the side and there wasn't enough for my husband and I both, so I threw together my own version of paleo cole slaw. It was great, and would be awesome for a BBQ.
You will need:
1 16 oz bag of shredded cabbage and carrots
1/3 cup paleo mayo
1/8 cup apple cider vinegar
1/2 tsp garlic powder
2 tablespoons lemon juice
1 tablespoon honey
Sea salt
1/2 cup chopped pecans
Mix all ingredients together and serve!
