Another Paleo Pizza Recipe

 
Paleo Pizza with Eggplant Crust One of my friends made this paleo pizza the other day and shared a picture of it on Facebook. I couldn't stop thinking about how delicious it looked, so I had to try it. It comes form the Make it Paleo cookbook. I changed my toppings just a little bit. To make the pizza you will need: 1 whole eggplant peeled and grated 1/4 cup flax seed meal 1/4 cup almond flour 1 egg Salt and pepper to taste 1 tsp olive oil 1 large tomato thinly sliced 1/4 lb prosciutto 1/2 cup arugula 1 tsp dried oregano 1 tsp dried basil The things I added 1 onion 1 red bell pepper 1/2 cup tomato sauce 1. Preheat oven 350 2. Grate eggplant with cheese grater, discard the skin 3. Place grated eggplant in a clean dish towel and squeeze over sink to remove excess liquid 4. Pour grated eggplant into large bowl 5. Add in flax seed meal and almond meal 6. Add a whisked egg and salt and pepper to taste and mix well 7. Pour batter onto parchment lined baking sheet and smooth out evenly into a thin layer 8. Bake 30-35 minutes 9. While baking slice onion and bell pepper and sauté in olive oil until caramelized 10. Remove crust from oven. Lightly grease another piece of parchment paper with olive oil, and place on top of crust. Flip crust and then slowly peel off parchment paper and brush that side with olive oil 11. Bake opposite side for about 15 minutes 12. Remove from oven, apply tomato sauce, onions and peppers, prosciutto, sliced tomatoes, oregano, and basil 13. Bake for 7-10 minutes.
