Taco Salad

This weekend flew by as usual. I had an extremely busy Saturday filled with coaching at Crossfit, birthday parties to attend with my kids, and a wedding reception for some friends. I'm still going strong on my whole30 journey. Today completes day 22. I think doing this 30 day challenge has brought me back in check with what I am eating. It had gotten too easy to grab a bag of sweet potato chips, whip up some paleo cookies or brownies, or dive into the dark chocolate covered almonds. While these little indulgence are ok on paleo, they should be a treat and not an every day thing. I had gotten too comfortable eating them.

I've posted a recipe for taco salad before, but this one is a little different. To make this one you will need

For the guacamole:
2 avocados
2 tomatoes
Sea salt
1/2 red onion
2-3 tablespoons lime juice

For the salad:
1 lb grass fed ground beef
1 onion, chopped
1 orange bell pepper chopped
1 tablespoon chili powder
1/2 tablespoon cumin
Salt and pepper

Lettuce
Fresh salsa

1. Start by making the guacamole. Chop tomato, onion, and avocados and place together in a bowl. Now add lime juice and sea salt and mix well.
2. Start sautéing you onion, beef, and bell pepper together in a little olive oil. Season with cumin, chili powder, salt and pepper. Cook until browned
3. Layer lettuce, meat, guacamole, and salsa on plate...... And enjoy.
