Blueberry Muffin recipe from Summer Cooking Series

 
Paleo Blueberry Muffin

This is the recipe that we used on this mornings episode of the summer cooking series. Try them out on your family tomorrow morning for breakfast. They will love them. This recipe comes from PaleOMG.

You will need:
1 cup almond butter,
1 cup almond flour,
3 eggs, whisked,
1/2 cup raw honey,
1/3 cup unsweetened coconut,
1/3 cup coconut oil,
1/2 tsp baking soda,
1/2 tsp baking powder,
1/4 tsp salt,
Pinch of cinnamon,
1/2 cup blueberries

Preheat oven 350. Mix all dry ingredients together. In a separate bowl, mix wet ingredients. Now mix them together and add the blueberries. Place ingredients into greased muffin tin in equal amounts. Bake for 15-20 minutes.

    Good morning,
    Where do you get your almond flour and unsweetened coconut in Alexandria?

      Hey-
      I get my almond flour on the organic foods aisle at Kroger, and the unsweetened coconut on the baking aisle at Kroger. For the unsweetened coconut you have to look closely at the bag because sometimes they have it mixed in with the sweetened coconut.
