Stuffed Apples

 

Stuffed Apples


I saw some yummy looking stuffed apples at whole foods yesterday and got inspired to try them myself. I basically copied their recipe but switched out the regular sugar for coconut sugar.


To make:

2 apples

2 tablespoons Walnuts

2 tablespoons Pecans

2 tablespoons Dried cranberries

2 tablespoons Raisins

2 tablespoons Coconut sugar

Dash of All spice


1. Preheat oven to 350

2. Begin by coring and scooping out both apples until center is open like a little cup

3. In a bowl combine walnuts, pecans, cranberries, raisins, coconut sugar, and all spice.

4. Stuff apples with mixture to the top

5. Bake 35-45 minutes.

    How far down did you scoop out, halfway, three-quarters? Also how big were your apples, now that it is apple season I feel like they have everything from monstrosities to tiny two biters. Thinking about making this or your apple crisp for a dinner party dessert for this weekend which do you think would go over better for a group of 6?? (Obviously if I went with this one I would buy the appropriate number of apples and increase the recipe as needed)

      Hey
      So sorry it took so long to eply. I’ve been out of town. I would say go about 3/4 of the way down on the apples. My apples were pretty big.
      For the apple crisp make sure your apples are crispy because a friend of mine made it and she said hers got soggy.
