Stuffed Acorn Squash
I saw this recipe on pinterest the other day. So, this morning at the grocery store When I found some beautiful acorn squash, I new exactly what I was going to make. I changed a few things to make it paleo, and here it is.
You will need :
2 acorn squash,
2 tablespoons of olive oil,
2 lb ground turkey,
2 cups mushrooms, chopped,
1 onion, chopped,
1 celery stalk, chopped,
1/2 tsp cumin,
Salt and pepper,
3 cups spinach leaves,
Preheat oven to 350. Cut squash in half and scoop out the seeds with a spoon. Turn over on a baking sheet and bake for 30 minutes. Remove squash from oven and let it cool until it is cold enough to handle. Scoop out the flesh of the squash with a spoon into a bowl. Be careful not to break the skin since you will be using later.
Now in a large skillet brown your grund turkey in the olive oil. Add mushrooms, onions, celery, salt and pepper. Let cook about 5 minutes. Now add the spinach and the squash that you scooped out earlier. Let cook together for a few minutes and then remove from heat.
Place empty squash shells in a baking dish, fill with the turkey mixture. Put in oven and bake at 350 for 20 minutes.
