This was one of the delicious dishes that we had at thanksgiving. I love anything with beets in it, and if you do too, your going to love this salad.
You will need:
2 lb beets(we used assorted colors),
1/4 cup balsamic vinaigrette(make by using olive oil, balsamic vinegar, and salt and pepper),
1/4 cup chopped walnuts,
Salt and pepper,
Garnish: fresh parsley leaves.
1. Start by preheating oven to 400. Divide the beets between two pieces of heavy duty foil. Drizzle balsamic vinegar over beets, and top with desired amount of salt and pepper. Seal the foil loosely. 2. Now bake at 400 for 45-55 minutes. Until they are fork tender.
3. Once finished cooking let cool for about an hour. Reserve all of the accumulated liquid from the foil packets in a small bowl.
4. Bake your walnuts at 400 for 8-10 minutes.
5. Finally, peel the beets, cut into slices, arrange on a serving platter, and drizzle with reserved liquid. Sprinkle them with walnuts and garnish.
