We had a great weekend in Houston. We went for the H Town Throwdown crossfit competition. A group of 13 people from Crossfit Alexandria went to compete and watch. My husband competed and I went for support. I brought my daughter with me so we could do a little shopping as well. Friday night we had dinner at a delicious Brazilian Steakhouse called Chama Gaucha, it was incredible. Saturday we shopped a little, and also watched everyone compete. I normally have a really hard time watching a crossfit competition because I wish I was competing, but this time I really enjoyed just being a spectator. It was a great weekend with great friends.
I made these plantains a couple of weeks ago, but I'm just now getting around to posting the recipe. These were truly delicious, and would be great with or without the mango salsa.
For the plantains:
2 ripe plantains
1-2 tablespoons coconut oil
Sea salt
For the mango salsa:
2 mangos, peeled and chopped
1/2 purple onion, chopped
1 red bell pepper, chopped
2 tablespoons lime juice
Sea salt
1. I like to cut my plantains while they still have the peel on them so that they don't get mushy.
2. Slice plantains and then remove peel. Place coconut oil in skillet and let it get hot.
3. Now place plantains in skillet and cook on both sides until they are browned.
4. Remove from heat and season with sea salt
5. For the salsa combine all ingredients in a bowl and mix.
6. Top plantains with mango salsa and enjoy!
