Paleo Granola.
This is a great granola to have for breakfast with almond milk and fresh berries. It's a nice change from my everyday eggs.
You will need:
2 cups chopped almonds,
1 cup chopped pecans,
1 cup chopped walnuts,
3 oz unsweetened coconut flakes,
1/4 cup coconut oil,
1/4 cup honey,
1/4 tsp salt,
2 tsp vanilla extract,
1 tsp cinnamon,
3/4 tsp nutmeg,
1/4 cup raisins,
1/4 cup dried cherries.
Preheat oven to 350. In a food processor combine almonds, pecans, walnuts, coconut flakes. Quickly mix in processor to chop. Add raisins and cherries to the nuts. In a separate bowl combine coconut oil, honey, salt, vanilla, cinnamon, and nutmeg. Mix together and pour this mixture over the nut mixture. Pour out onto a baking sheet. Bake for 20 minutes or until crispy.
