Today we had our local Susan G Komen race for the cure. Over 5,000 people showed up to run or walk a 5k for a great cause. It was an awesome event and a great 5k. After the race was over we went to a local coffee shop. My daughter kept insisting that she get a blueberry muffin. She has never been interested in muffins, but I let her get one and she actually ate it, and loved it. So when we got home I decided to try a paleo version out on her and see if she liked it. I used a recipe that I found on paleomg. She loved them, and so did I. I accidentally ate 3.
You will need:
1 cup almond butter,
1 cup almond flour,
3 eggs, whisked,
1/2 cup raw honey,
1/3 cup unsweetened coconut,
1/3 cup coconut oil,
1/2 tsp baking soda,
1/2 tsp baking powder,
1/4 tsp salt,
Pinch of cinnamon,
1/2 cup blueberries
Preheat oven 350. Mix all dry ingredients together. In a separate bowl, mix wet ingredients. Now mix them together and add the blueberries. Place ingredients into greased muffin tin in equal amounts. Bake for 15-20 minutes.
These look great! However, I think you omitted the part about adding the wet and dry ingredients together, and later folding the blueberries into the batter.
