You will need:
Olive oil,
1 eggplant,
1 egg,
Salt and pepper,
Toni's seasoning,
1 tablespoon garlic powder,
2 cups almond flour,
1 tsp garlic minced,
1 14.5 oz can tomato sauce,
1 14.5 oz can diced tomatoes,
1 tsp Italian seasoning.
1.Pre heat oven to 350. Start by slicing your eggplant.
2. Now, in a sauce pan combine tomato sauce, diced tomatoes, garlic, salt and pepper, Italian seasoning. Let simmer on low for about 15-20 minutes to allow flavors to combine.
3. While that is cooking. Place egg in a small bowl and beat. In another small bowl combine almond flour, salt and pepper, garlic powder, and Toni's seasoning.
4. Heat olive oil in a skillet. Dip each piece of eggplant in egg mixture and then almond flour mixture and fry in olive oil on both sides.
5. Once all eggplant is cooked, place it in a baking dish and top with tomato sauce. Now bake for 20 minutes.
What’s in this Toni’s seasoning that you speak of?
Hey. It’s a Cajun spice. It’s basically an all purpose seasoning that is a little bit spicy.
It is called Tony Chachere’s Original Creole Seasoning in a green can.

We this for dinner & let me just say YUM! I did not realize I was out of almond flour, so I used the remaining coconut flour (1/2 cup) I had and garbonzo flour. But it cooked the same. Thank you for sharing your recipes!
I halved my almond flour and used ground flaxseed and a little quinoa flour, and since I didn’t have the Tony seasoning, I just used some italian seasoning and added some crushed red pepper for the kick. At the end, this may be one of my favorite dinner recipes. With the frying, it was faster than the traditional eggplant parm recipe and turned out just as amazing. Added a little chicken sausage for protein. So yummy! This will be a staple in my household.

There is no quinoa in this recipe.
I tried making this tonight but was unable to cook in frying pan. Tried and they smoked like crazy! They’re in oven now and hoping they’re edible, cause I’m hungry!
