So in honor of tonight's opening ceremonies and because my kids have been asking me to make chocolate chip cookies, I decided to make them. They are definitely not the prettiest cookies you have ever seen, but my kids thought they were real chocolate chip cookies made with sugar and flour, so that might tell you how good they are.
I got the recipe from the Make it Paleo cookbook, but I have added a couple of things to it.
You will need:
3 cups almond flour
1 tsp baking soda
1 tsp salt
2 eggs
1/2 cup pure maple syrup
1 tsp vanilla extract
1/2 cup coconut oil
1.5 cups 72% dark chocolate chips
1/2 cup unsweetened coconut flakes
1/2 cup chopped pecans
Preheat oven to 375
In a medium mixing bowl combine dry ingredients
In a small mixing bowl combine eggs, maple syrup, and vanilla extract
Pour wet ingredients into dry ingredients and mix well
Melt coconut oil and pour into batter
Next stir in chocolate chips, pecans, and coconut flakes
Now drop about tablespoon size balls of dough on a baking sheet (try to keep them in small balls, because they will turn out less flat this way).
Now bake for 8-10 minutes depending on your oven. My oven only takes 8 minutes, so watch them carefully so they won't burn.

Making these right now, substitute almond flour with some quoins and coconut flour, and used honey and agave instead of maple syrup. And cranberries instead of chocolate chips! Can’t wait to try them!

I just made these, used agave instead of maple syrup, but the dough was really really dry. I ended up adding another half cup coconut oil, did I do something wrong?
Hey- I’m not sure. Mine have never been dry, I’ve always been afraid mine were too liquidy actually. How did they turn out with the extra coconut oil?
