Our weekend is quickly coming to an end. It was very eventful. I had a meeting all day on Saturday for my children's school, and Saturday evening we took our kids to the circus. I have to say the circus was quite entertaining for many reasons, but my kids loved it. Sunday morning I had to run 3x 1 mile repeats at our local high school track for my workout. It was probably one of the hardest WOD's i did all week! Now I'm preparing for my busy week. Our Crossfit is putting on a team competition this weekend called "the battle of the fittest", and I will be competing as well as selling my paleo chocolate chip cookies at a Fit Paleo Mom table. I'm super excited about it. Crossfitters from all over the state are coming to compete. I think it's going to be great for our local crossfit community, and I'm curious to see if people like my cookies.
I made this chicken for dinner tonight and it was a hit with everyone. Try it.
To make you will need:
1 2 lb chicken
1/8 cup ghee
1/2 cup olive oil
Sea salt
Cajun seasoning
2 cloves minced garlic
1 tsp thyme
16 oz of brussel sprouts
1 small bag of baby carrots
1 large onion cut into large chunks
1. Preheat oven to 425
2. In a bowl melt ghee, then add garlic, olive oil, and thyme.
3. Place chicken on large baking sheet and pat dry with a paper towel. Surround chicken with vegetables
4. now season vegetables and chicken with sea salt and Cajun seasoning
5. Now pour ghee, olive oil mixture over chicken and vegetables and toss around to make sure all are covered.
6. Place in oven and bake for 90 minutes.
What exactly is ghee and can we find it in the Alexandria area??
It’s clarified butter. They sell it at Kitchen Warehouse. If not, I have posted a link on my blog to order it from amazon.

No, I always use Tony Chachere’s seasoning
I’ve never seen anyone roast their chicken breast side down. What’s the theory there?
