So it's officially day 27 of my whole30 challenge. I will admit that this weekend I was on the verge of a paleo cookie meltdown. I wanted to just have some dark chocolate or a paleo treat so bad. Its sad that the only thing I am looking forward to having is a paleo snack, not like a candy bar or some potato chips. But anyway, I stayed strong through the weekend and got through. I ran early yesterday morning and for some reason I just felt hungry all day. It might have been a little bit of dehydration or something. I just felt like I walked through my kitchen all day and just opened the fridge to get a bite of anything.
I got this recipe from one of my crossfit friends. She always makes the best salad combinations. Anytime I have had one of her salads, I swear it's the best salad I've ever had, and she keeps topping herself with a new one. For this salad you will need
Chicken( grilled, baked, or roasted)
Spring mix and spinach mixed
Sunflower seeds
1 avocado
8-10 pitted dates
Cherry tomatoes
Olive oil
Balsamic vinegar
Start by making the balsamic date reduction. Place olive oil and balsamic vinegar in a sauce pan along with your dates. Let cook for a couple of minutes. You want the dates to get warm, but not mushy.
Combine greens, avocado, sunflower seeds, and tomatoes. Top with a piece of your chicken and then pour dates and balsamic dressing over.
