Egg Salad

 
Egg Salad

The other day PaleOMG posted a recipe for egg salad. It looked sooo good. This morning when I got home from the gym it's all I could think about. So I made my version of egg salad.

To make you will need:
6 eggs
6 strips cooked, chopped bacon
1/3 cup chopped celery (optional)
3 tablespoons paleo mayonnaise
3-4 dill pickle spears, chopped
Salt and pepper

To make the paleo mayo:
1 egg
2/3 cup avocado oil
1/8 tsp garlic powder
1 tsp Dijon mustard
1 tsp lemon juice
Salt to taste

1. Hard boil 6 eggs. While they are cooking make your mayonnaise.
2. For mayo- add egg, lemon juice, Dijon mustard, garlic powder, and salt to blender and turn on. Now slowly add the oil while blender is still going. As you add oil the mixture will start to thicken. Once it is the consistency of mayo you can turn off.
3. In a boil add chopped egg, bacon, celery, mayo, chopped pickles, and seasoning. Mix well, and enjoy
