I'm in need of easy meals this week. I just don't feel like cooking anything that is too time consuming. I found a recipe similar to this for grilling the chicken. I changed a few things and threw it in the crockpot. I made some coconut "rice" to go with it.
For the chicken:
3 lbs boneless skinless chicken breasts
6 oz fresh, organic pineapple juice
2 red, orange, or yellow bell peppers chopped
4 cups freshly chopped pineapple
1 cup coconut aminos
1/4 cup maple syrup (optional)
1 tsp sea salt
1 tsp garlic powder
1. Throw all ingredients in a crockpot and cook on low for about 4 hours or until chicken is cooked.
For the coconut rice:
1 head cauliflower
1 tablespoon coconut oil
1 small onion, chopped
1/3 cup coconut milk
Salt and pepper
1. Start by cutting up cauliflower and putting in your food processor until it is the consistency of rice.
2. Next head coconut oil in a medium skillet and place chopped onion in it. Cook until onion starts to become translucent.
3. Now add cauliflower and coconut milk.
4. Season with salt and pepper
5. Let cook about 12-15 minutes, or right when the cauliflower starts to brown.
