Day 23 of my Whole30. Feeling great and really enjoying this journey. Im actually going to keep it going and make it a whole40. Ive been cooking so much and eating out less and the food has been delicious.
To make the chicken cacciatore:
1 onion, chopped
2 cloves minced garlic
2 cups sliced mushrooms
3 tablespoons capers, drained
Salt and pepper
1 can diced tomatoes
2 cups chicken broth
2 lbs chicken thighs
1/2 cup balsamic vinegar
Basil
1. Place onion, garlic, and mushrooms in the bottom of the crock pot
2. Now place chicken thighs on top and cover with capers, tomatoes, chicken broth, salt and pepper, and balsamic vinegar.
3. Place crock pot on low and cook for 6-8 hours depending on temp of crockpot.
4. Serve over spaghetti squash

My biggest change when starting whole30 was cutting out a lot of my snacking. I had gotten to where I was eating too many paleo snacks in the afternoons. Kind of like when my kids would snack after school I was joining them and then some. Also, I had gotten to where grabbing a handful of my kids snack was routine. With whole30, I cut all of that out. I feel so much better! It’s hard for the first 10 days or so, but after that you feel so good that you want to keep it up.
