I know this sounds crazy because we are in Louisiana..... But today we are having a snow day. The kids are out of school today and tomorrow because of the weather, and we are hanging out at home this afternoon.
I am trying to use everything in my refrigerator before we move this weekend. I found some crawfish tails that were frozen and decided to make crawfish soup. It was a perfect dinner for this cold and snowy day.
You will need:
Olive oil
2 medium onions, chopped
2 medium bell pepper, chopped
2 cloves minced garlic
2 lbs peeled crawfish tails
Creole seasoning
Salt and pepper
32 oz of chicken broth
1 13.5 oz can full fat coconut milk
1. Start by sautéing the onion, bell pepper, garlic, and crawfish tails in a large soup/ sauce pan.
2. Once they are starting to brown and cook together season with creole seasoning and salt and pepper.
3. Add coconut milk and chicken stock and stir to combine
4. Let cook together about 10 minutes and then turn to low and let simmer for about 10 more minutes.
I can’t wait to try this, it looks great!
OH MY GOSH, I just read you are in/from Louisiana!!!! I live in Lake Charles! Just this past week I was finally able to cook the Butternut Squash Lasagna & Southwest Chicken Soup recipes and they were DELICIOUS!!! I can’t wait to try the crawfish bisque! And thank you for eating paleo!

Delicious!!!! Next time I will add a some cornstarch or coconut flour to thickin it up a bit. 😉
use arrow root flour. It is the paleo substitute for cornstarch. Put 1 tablespoonful in small amount of water before to thicken up soup. Been on paleo for 2 years now…love it
Thanks for all of the recipes! We live in Vidalia, LA and I’m just about to start Paleo. I’ve been gluten free/dairy free for a good while now, but want to clean my eating up more. In Louisiana, it’s so hard to give up the food I’ve grown up on, so finding variations to it makes it so much better!!
