We received our first weekly box of vegetables from Inglewood Farm. I want to make sure that I use all of these delicious organic vegetables before we get our next box in a week. So, our dinner tonight is kind of a strange combination. We got broccoli in the box so i decided to make a broccoli soup. A friend at crossfit told me about a bacon broccoli soup that his wife made and he said it was delicious. I didn't have her recipe so I found one and added a few things. I got this recipe from Gwyneth Paltrows cookbook, My Father's Daughter. It is a beautiful cookbook with some great recipes. Anyway, I also oven roasted some carrots and mixed kale that were in our vegetable box as well.
To make the soup you will need:
2 tablespoons olive oil,
2 cloves minced garlic,
1 yellow onion chopped,
2-3 stalks of broccoli cut into small florets,
1 32 oz of chicken or vegetable stock,
1/2 teaspoon salt,
1/4 tsp ground black pepper,
1/2 cup coconut milk,
5-7 strips of bacon chopped.
1. Heat olive oil in a large soup pot and add garlic and onion. Let sauté until fragrant.
2. Add broccoli to pot and cook with onions and garlic for about 5 minutes.
3. Next, cover broccoli with chicken broth and salt and pepper. Bring to a boil.
4. Meanwhile, cook bacon in a skillet.
5. While the bacon is cooking let soup mixture simmer on medium to high heat for 5 minutes.
6. Add bacon to soup and let simmer for 10 minutes. Add coconut milk.
7. Now blend the soup with a hand mixer. Top with some crispy bacon and serve.
i see that you have coconut milk listed in ingredients, but it does not call for it anywhere in instructions…..
Sorry. Add the coconut milk when you add the chicken broth and salt and pepper. I will fix that
