No Bake Cookie Bites

No Bake Cookie Bites

Headed to a friends for memorial day and I wanted to make a quick dessert that I can have on the whole life challenge. Decided to come up with my version of a Lara bar/ cookie ball.

1 12 oz container of medjool dates, pitted
4 tablespoons all natural/ unsweetened almond butter or peanut butter
1 tsp vanilla
1/2 cup pecans
2 tablespoons water
1/2 cup unsweetened coconut flakes

1. In a food processor place dates, nut butter, vanilla, pecans, coconut flakes, and water.
2. Pulse until all ingredients are combined. It took mine a little while to come together.
3. Once together, roll into small balls and place on wax paper.
4. Refrigerate to harden, or eat soft! They are good both ways!
