I'm headed to Colorado tomorrow with my kids. This will be the first time that I have traveled alone with all three children on an airplane. It should be interesting to fly with a 6, 4, and 2 year old. I'm scared!! Once I get to Colorado my parents are there, so I'll be good. I'm just praying for no meltdowns on the plane. My husband is home alone for a few days so I cooked up some Pulled pork with mango salsa, and some Chicken Enchiladas, so he should be good on food for a couple of days.
My neighbor brought me some delicious home grown tomatoes today. They looked beautiful and I knew that they would taste the same. I used to love a good BLT, and this is my paleo version. The key ingredient in this besides good tomatoes, is the paleo mayonnaise. Since starting paleo I have tried a handful of paleo mayo recipes and all of them didn't turn out as well as I had hoped. This paleo mayonnaise recipe from Everyday Paleo is by far the best one I have found, and it's super easy. I add a little bit of creole seasoning to it and you can use it for anything. I've used it in egg salad, tuna salad, and chicken salad.
Simply cook your bacon, and stack with fresh tomatoes, avocado, and mayonnaise and you can't go wrong
