Bacon and Egg Breakfast Sandwich

This recipe is so simple and so good. I want to eat it every day now.

You will need:
1 sweet potato
2 eggs, scrambled
2 pieces of cooked bacon
Salt and pepper
Coconut oil

1. Slice the sweet potato thinly and long ways.
2. In a skillet melt about 1 tablespoon coconut oil and cook sweet potato on both sides until softened and brown on both sides.
3. Once cooked, make sandwich with egg, bacon and salt and pepper.
4. Enjoy!
