This is just one of the sides that we had after church on Easter Sunday. We also had this same dish but used leeks instead of asparagus and it was delicious as well.
To make asparagus:
2 bunches of asparagus ( steamed)
2 cups cooked, chopped bacon pieces
2 hard boiled eggs
1 tablespoon champagne vinegar ( or vinegar of your choice)
1 tablespoon Dijon mustard
1/2 tsp sea salt
3 tablespoons avocado oil
2 tablespoons olive oil
1. Place steamed asparagus on platter
2. In a bowl combine vinegar, mustard, salt, avocado oile, and olive oil and mix well
3. Top asparagus with crumbled bacon and crumbled hard boiled egg.
4. Drizzle dressing on top and serve.
