Veggie egg scramble

Veggie Egg Scramble

As I was reading the can and can't have foods for the whole life challenge, I realized something that I was not aware of..... If you are doing the advanced challenge, you can't have most bacon. That makes me sad. I LOVE bacon, but most bacon ( even nitrate free has some sugar in it) So breakfast will have to be just a little bit different.
Yesterday was day one and I had hard boiled eggs and avocado for breakfast, tuna salad for lunch, and boiled crawfish for dinner. For my snacks I had a Lara bar, a banana, a few dried mango slices, and a spoon of almond butter. I wanted something sweet after dinner so I cut up some cantaloupe and had that for dessert. I'd say day 1 was a success.

For this mornings veggie scramble
Olive oil
1/4 chopped onion
1/4 chopped red bell pepper
3 eggs
1/2 avocado

1. Heat olive oil in skillet
2. Add onions and peppers and let soften
3. Add eggs and salt and let cook
4. Finally add avocado and top with salsa.
