After my run this morning I got home and my husband had already put the eggs, mushrooms and spinach on the counter, along with a clean skillet on the stove. I took this as a hint that I would be making breakfast. We had 30 minutes to cook, eat, and get ready for church.
I started by cooking some whole30 approved bacon. Then I used the bacon grease to scramble the eggs, mushrooms, and spinach. While that was cooking I grilled some plantains slices in coconut oil. It was the perfect breakfast.

when you say you grilled the plantain, do you actually put it on the grill?
Actually I’ve done both, I’ve grilled them outside on the grill and also in the skillet on the stove top. Either way thy are great!
