Eggplant Bolognese.
I got the recipe from
Everyday Paleo I did change a few things in it, but it's pretty close to the same. I've always loved spaghetti Bolognese, so I knew already that I would love this dish.
You will need:
4 tablespoons coconut oil,
2 medium size eggplants, peeled and cubed,
1 onion, chopped,
1 red bell pepper cut into small pieces,
2 lb ground beef,
1 teaspoon sea salt,
2 tablespoons balsamic vinegar,
3-4 cloves garlic, minced,
1 1/2 cups tomato sauce,
1 tablespoon dried oregano,
Pepper.
Start by heating 2 tablespoons of coconut oil in a large soup pot. add the eggplant and sauté until tender, about 5-8 minutes. Remove eggplant from pan and set aside. Add remaining 2 tablespoons of coconut oil to pot and sauté bell peppers and onions until tender. Remove peppers and onions from pot and set aside. Now crumble the ground meat into pot and brown. Add the teaspoon of salt and stir. Now add the balsamic vinegar and garlic and bring to a simmer. Next add the eggplant, onions, and peppers to the meat. Pour in the tomato sauce, oregano, some pepper and maybe a little more salt. Serve in a bowl and enjoy.
