I absolutely love beets. So today at the store when they were putting fresh beets out, I knew that is what's would cook for tonight's dinner with our grass fed ribeyes. I normally begin cooking my beets by chopping the greens off the top and throwing them away. Well, not today.
So I have two recipes in one today. My grilled beets, and the sautéed beet greens.
Grilled beets:
3 beets
1/4 cup coconut oil
Sea salt
1. Start by heating your grill( you want it about 350)
2. Now chop the greens off of the top of the beets and put to the side.
3. Now wash the beets really good, and scrub with a clean sponge, or vegetable scub brush
4. Slice beets about 1/4 in in thickness
5. Place beets on baking sheet and top with coconut oil. I use a little brush to brush it on both sides.
6. Place beets on grill and sprinkle with sea salt. Let grill about 20 minutes, flipping them and salting them halfway through
Sautéed Beet Greens:
Beet greens
Olive oil
Chopped onion
2 cloves chopped garlic
Salt and pepper
Juice of 1/2 a lemon
1. Place olive oil in a skillet
2. Now add chopped onion and garlic and let cook until they begin to brown.
3. Once browned, add beet greens and mix well
4. Add salt and lemon juice
5. Let cook until wilted.
