Since tball season has begun, I am preparing to do lots of cooking with my crockpot. This is a new recipe that I have never tried. It is super easy and turned out great. It's simply throwing it all in your crockpot and letting it cook all afternoon. We ate ours over spaghetti squash.
To make:
3 lbs boneless skinless chicken thighs
14 oz can diced tomatoes
4 cloves minced garlic
6 oz can of tomato paste
1 cup chicken broth
1/3 cup balsamic vinegar
1 onion chopped
1 red bell pepper chopped
1 yellow bell pepper chopped
1 cup mushrooms
1 tablespoon Italian seasonings
Salt and pepper
1. Place all ingredients in crockpot and let cook 6-8 hours
2. Serve over cooked spaghetti squash
