It's that time of year again!! Yes.....pumpkin time! I've already been to our local pumpkin patch 3 times and I'm sure I will be there again before it's over. The weather is changing and it's finally becoming fall in Louisiana. I can even wear jeans and not have a heat stroke. This is definitely my favorite time of year. So, I am going to try to make all of my posts until the end of November geared towards something you can make for your family at Thanksgiving. Today I made these muffins for breakfast. We all loved them, including the kids.
To make muffins you will need:
1 cup almond flour
1 cup almond butter
1 cup canned pumpkin
3 eggs whisked
1/2 cup raw honey
1/3 cup coconut oil
1/2 tsp baking soda
1/2 tsp baking powder
1/4 salt
1/2 tsp cinnamon
1/2 cup chopped pecans
1. Preheat oven to 350
2. Mix almond flour, baking soda, baking powder, salt and cinnamon in a large bowl.
3. Add eggs, almond butter, honey, pumpkin and coconut oil
4. Mix well
5. Add chopped pecans
6. Pour into individual greased muffin tins in equal amounts
7. Bake for 15-20 min
You have almond butter listed, but no amount?
You have raw honey listed but it just says 1/2. Does that mean a 1/2 cup?

In the directions you say to add almond butter, but it is not listed in the ingredients. How much should be added? Thanks
What pumpkin patch here in Alexandria do you think is best?
