This week is flying by and it has been extremely busy. I haven't been home to really cook this week. Tonight is the release of the second WOD for the crossfit games and our crossfit group is meeting at a local restaurant to eat and watch the release of the WOD. We plan to do this on Wednesday nights for the next 4 weeks. So, today's recipe was actually my lunch. My husband came home to eat and I literally whipped these up while he was waiting. They are super easy to make.
You will need:
2 tablespoons sesame oil
1 package chicken strips, cut into pieces
1 onion chopped
2 carrots chopped
1 glove minced garlic
1/4 cup coconut aminos
Salt and pepper
1/2 cup chopped almonds
1 can of sliced water chestnuts
1 head of lettuce
1. Start by sautéing your onion, garlic, and chicken pieces in sesame oil.
2. Once they start to brown add your carrots
3. Season with salt and pepper. Add coconut aminos
4. Let cook together while stirring occasionally.
5. Once the chicken is cooked through turn off the heat and add almonds and water chestnuts. Stir together and serve in lettuce.
