Blueberry cobbler

Blueberry Cobbler

So I have lots of friends who are doing whole30 right now who are not going to be happy about this post. You should definitely make this when you are done with your whole30. If I do say so myself.....it was AWESOME!
Since completing my whole30 I have been trying to eat about 95% whole30 compliant. It's going great and I feel like I have control over my food choices again. I can have a paleo dessert because I'm on vacation, or because I want to, not because I can't eat a meal without thinking i have to have dessert afterwards.

To make the cobbler you will need:
8oz blueberries
1 lemon
1 cup almond flour
2 tablespoons maple syrup
1/4 cup coconut oil
Pinch of salt
Pinch of cinnamon
1/2 cup chopped pecans

1. Preheat oven to 375
2. Toss your blueberries in the juice of one lemon
3. In a bowl combine almond flour, maple syrup, coconut oil, salt, cinnamon, and chopped pecans.
4. In 4 or 5 small ramekin dishes cover the bottom of them with blueberries
5. Now top them with the Almond flour mixture
6. Bake 30 minutes.
