Today I spent the day shopping with my daughter. We had a great day. We started our day with some eggs for breakfast and for lunch we stopped at a chipotle and I had a big salad. After shopping we went back to whole foods to get a bunch of things that we cant get in our local grocery store. I brought an ice chest to fill. I ended up getting golden beets, kale, japanese sweet potatoes, japanese eggplant, coconut aminos, arrowroot powder,coconut flakes, macadamia nut oil, some fish, and chicken.
When I got home I threw together some dinner quickly. I made some beef lettuce wraps. My husband says that we eat these too much, but the are really good and so easy to make.
You will need:
A head of butter lettuce
2 tablespoons olive oil
2 lb ground beef
1 onion, chopped
2 carrots, chopped
2 cloves of garlic
1/4 cup coconut
1 teaspoons of sesame oil
1 cup water chestnuts
1/2 cup chopped almonds
Salt and pepper
Start by chopping the onion and carrot, next put olive oil in skillet and begin to sauté onions and carrots, add garlic, and next add beef. While meat is browning add coconut aminos, sesame oil, salt and pepper. Finally add water chestnuts and top with chopped almonds.
Wrap in lettuce and enjoy!
