Baked salmon and cauliflower cous cous

 
Tonight's meal is definitely one we will be making over and over. It was sooo good. My husband went back for seconds and thirds.

To make the salmon you will need:

1 large 2 lb piece of salmon
2 tablespoons coconut oil
Salt and pepper
Cavender's Greek seasoning

Preheat oven to 350, line a baking sheet with foil. Cover salmon with coconut oil, season with salt, pepper, and Greek seasoning. Bake for 20-25 minutes.

Cauliflower cous cous

2 tablespoons olive oil
2 cloves garlic
1 head of cauliflower
1 onion
1/2 red bell pepper
1/2 cup of chicken broth
Salt and pepper

Chop onion and set aside, chop bell pepper and set aside also.
Chop the entire head of cauliflower into pieces big enough to fit in the food processor. Place chopped cauliflower into the food processor (I usually only do a little at a time because my food processor isn't very good and it can't handle too much at once). Chop until it becomes the consistency of rice.
Next, add the olive oil and garlic to a sauce pan and sauté about 1 minute. Then add the onion and bell pepper to the sauce pan and saute until they are lightly browned. Add the chopped cauliflower and season well. Finally, add the chicken broth. Stir well and let cook about 10 minutes or until it starts to brown. If you think yours is too dry, add a little bit more chicken broth.

    Hey Kathryn!!

    Just wanted to let you know this cauliflower couscous was amazing!!! We aren’t Paleo, but I’m trying to get the rest of my baby weight off so I’m eating no carbs (except fruits and vegetables) or dairy, which I guess is kinda Paleo but I don’t know if i could do it forever. I thought my husband was going to be like what is this??? He loved it!!! Went back for seconds! Thanks so much for posting! Hope your well!
