Baked cod over sautéed spinach

Baked cod over sautéed spinach I usually stick to cooking salmon when I decide to cook fish, but I got some fresh cod at the grocery store and decided to give it a try. Start with 4 pieces of fish. Preheat oven to 350. Line baking dish with foil. Top each piece of fish with ghee, garlic, salt, pepper, and Toni's seasoning. Bake for 30 minutes. While fish is cooking start your spinach. In a skillet put 2 tablespoons of olive oil. Add about 9 oz of spinach to skillet and let it begin to cook down. Add salt and pepper to spinach. I also added a drizzle of balsamic vinegar and 1 clove of garlic. Let cook for a few minutes.Top spinach with the cod and serve.
