Stuffed bell peppers

Tonight we had my mom's stuffed bell pepper recipe that I converted into paleo. The only things that I had to take out are the bread, butter,and the bread crumbs, and they were just as good.

You will need:
5 sweet bell peppers ( I use all different colors)
2 tablespoons of olive oil
1 large onion
1 rib of celery
12-15 baby carrots
2 cloves of garlic
2 lb grass fed ground beef
1 egg
Salt and pepper
Cajun seasoning

Preheat oven to 350
Start by cutting the tops off of the peppers and scraping out the insides. Save the tops that you remove for later.
Soak the peppers in boiling water for about 5 minutes to soften. Set aside.
Now chop the onion, celery, carrots, garlic, and left over pepper tops. Set aside.
Put the olive oil in a large skillet and begin to brown the meat.
After a few minutes of browning the meat add the chopped vegetables. Now season with salt, pepper, and Tony's. Sauté until browned. About 10 minutes.
Remove from the heat and let cool for a bit.
Now add 1 egg to the meat and vegetables and stir in well.
Place peppers upright in a baking dish and fill them generously with the meat and veggies.
If you have any extra meat you can put it in small baking dishes to bake also.
Bake peppers for 30 minutes.
