This recipe comes from a website called meatified.com. I am trying thanksgiving recipes out this week to see what I want to bring for our families thanksgiving meal. This be is delish!
You will need:
3 sweet potatoes
2 shallots, sliced
1/4 cup almond flour
2 tablespoons coconut butter
1 1/2 cups coconut milk
2/3 cup purée pumpkin
1/2 tablespoon garlic powder
1/2 tsp salt
1 tablespoon fresh thyme
1. Slice sweet potatoes approximately 1/8 of an inch thick
2. Grease a 7x11 baking dish
3. Place overlapping layer of sweet potatoes on the bottom of the dish, alternate with shallots. Continue layering until sweet potato and shallot slices are used up.
4. Preheat oven to 400 while you make the sauce
5. Add coconut butter to a sauce pan and melt. Once melted add almond flour and whisk together.
6. Now add coconut milk slowly while still whisking.
7. Add salt, garlic powder, and thyme and mix
8. Now add pumpkin and whisk together.
9. Pour sauce over sweet potatoes and bake at 400 for 30-40 minutes.
