This recipe came to me as I realized at lunch time that I would not be home until around 8 tonight. I would not have any time to cook so I would need to crock pot my dinner. I basically just used what I had to create tis meal. We served it over steamed cauliflower. It was a winner!
To make you will need:
3 onions chopped
12 oz of white mushrooms chopped
4-6 boneless skinless chicken breast
1/2 can coconut milk
1/3 cup balsamic vinegar
1 cup chicken broth
Salt and pepper
Toni's seasoning ( or another all purpose seasoning of your choice)
1. Layer crockpot with onions, mushrooms, chicken
2. Top with coconut milk, balsamic vinegar, chicken broth, and seasonings
3. Cook on low for 5-7 hours
