To make the chicken you will need:
2 lb boneless skinless chicken thighs
1/4 cup coconut aminos
2 tablespoons rice wine vinegar
2 tablespoons tomato paste
1 tablespoon sesame oil
1 tablespoon palm sugar
1 clove mined garlic
Salt and pepper
1/2 cup cashews
1. In a small bowl mix coconut aminos, rice wine vinegar, tomato paste, sesame oil, palm sugar, garlic, and salt and pepper
2. Place chicken in crockpot, cover with sauce.
3. Cook 3-5 hours on low.
4. Add cashews, serve over cauliflower rice.
