Just left my daughters dance recital, and now we are headed to Florida on vacation for the week. Cant wait to have some fun on the beach, and eat some good food.....paleo of course. I will try to post some of my meals to share with you.
I saw this salad recipe in my new paleo cookbook Gather. I didn't have all of the ingredients to make it, so I had to use what I had. It turned out great.
You will need:
1 bag chopped romaine
1 jar roasted red peppers, chopped
1 jar marinated artichoke hearts
1 package sopressata, cut into pieces
1 small jar green olives
Dressing
4 tablespoons olive oil
2 tablespoons balsamic vinegar
Sea salt
Toss all ingredients together in a bowl and enjoy.
