My trip to New York was incredible. The weather was beautiful, the food was wonderful, and we had a blast. I was able to go to the Reebok Crossfit 5th Avenue one morning, and also run in central park another morning. Those two things made my trip right there. We also saw the rockettes Christmas show and Cinderella on Broadway. We ate at some delicious places. For lunch one day we ate at an all paleo restaurant. Also, one morning I ordered some Chia Seed pudding tipped with mango for breakfast. I've been thinking about it ever since. So today I made some. It was super easy and it's a great snack to have or breakfast to eat.
To make:
1 can full fat coconut milk
1/2 cup chia seeds
1/4 cup honey
1/2 tsp vanilla.
Mix all ingredients in bowl and refrigerate for 4 hours before eating. Top with your favorite fruit and ,enjoy.
