This weekend a few friends and I went to Baton Rouge for a little girls weekend. After shopping a little, we stopped at a new coffee shop and enjoyed almond milk lattes and paleo muffins. The paleo muffins we had were so good that they inspired me to make these Coconut Apple Muffins. We even went back for more Saturday morning following our run around the lakes and our WOD at Red Stick Crossfit. The weekend was Just perfect, there is something about getting away with your girlfriends for a day or two that can be so refreshing. Sunday, I participated as a running buddy for our local Girls on the Run program. I was paired with a 3rd grader and I ran her final 5k with her. It was so inspirational and great to see all of the girls finish. They have been in an 8 week program that focuses on self esteem and the 5k is just the final part of it. What a wonderful weekend!
For the muffins:
1 cup almond flour
1 cup almond butter
3 eggs
1/2 cup honey
1/3 cup unsweetened coconut flakes
1/2 tsp baking soda
1/2 tsp baking powder
1/4 tsp salt
Pinch of cinnamon
1 apple, cored and chopped
1. Preheat oven to 350
2. Grease a muffin pan
3. Mix all ingredients in a mixing bowl, and fill muffin pan each cup about 3/4 full
4. Bake 15-20 minutes.

I actually just got married and moved to Arizona. But I Lived in Baton Rouge for the past 7 years. Was Magpie the coffee shop you visited? I miss their paleo muffins like crazy! 🙂
