This week is the first week of the crossfit open. It's a 5 week online crossfit competition that determines who will compete in regionals. Every Wednesday for 5 week a new WOD is announced. This weeks WOD was a burpee/snatch ladder. It was definitely very difficult, but fun to be a part of. I ended up doing the WOD twice hoping to get a few extra reps the second time. That was torture, and I didn't improve my score, but I tried. So as a treat to myself and everyone who showed up at crossfit on Sunday afternoon to do the WOD again, I made these delicious paleOMG brownies.
For the crust:
12 dates ( remove pits)
1/2 cup almond butter
1/4 cup unsweetened coconut flakes
2 tablespoons raw honey
3 tablespoons unsweetened cocoa powder
1 teaspoon cinnamon
Pinch of salt
For the Caramel:
12 dates ( remove pits)
5-6 tablespoons canned coconut milk
3 tablespoons water
1 teaspoon vanilla extract
Pinch of salt
For the topping:
1 cup enjoy life dark chocolate chips, melted
1/4 cup canned coconut milk
2 teaspoons ground coffee
Coarse sea salt, to top
1. Mix all crust ingredients in a food processor and mix until blended. Add crust mixture to a bread pan and push down to cover the bottom of the pan like a crust.
2. Now make the caramel. Add dates to food processor and one tablespoon at a time at the coconut milk and water. Then add vanilla and salt.
3. Once mixture is like caramel spread on top of the crust.
4. In a microwave safe bowl melt chocolate chips with coconut milk. Mine melted in 35 seconds. Mix in coffee grounds and top caramel with chocolate mixture. Top with sea salt.
5. Put in freezer for 10 minutes. And then enjoy!
