This recipe comes from PaleOMG. I've made these before using strawberries and they were just as good and super easy.
To make the crust:
12 dates, pitted
1 cup unsalted cashews
2 tablespoons alone butter
1 tsp cinnamon
Pinch of salt
To make the topping:
6 oz blueberries
6 oz raspberries
1/4 cup maple syrup
1/4 cup coconut butter
Pinch of cinnamon
Pinch of salt
1. In a food processor combine all crust ingredients and mix until smooth
2. In a baking dish or loaf pan press crust firmly to the bottom of pan until evenly distributed
3. In a saucepan over medium heat add berries and maple syrup. Continuously stir until you have almost a runny jam like mixture
4. Add coconut butter, cinnamon and salt
5. Pour this mixture on top of crust and spread over it.
6. Place in refrigerator for 30-45 minutes
7. Enjoy
