Sweet Potato Bun

I saw this recipe from a friend on Instagram and immediately emailed her for the recipe. Her picture looked soooo good I had to have it.

To make:

1 large sweet potato, peeled and spiralized

2 tsp garlic powder

salt and pepper

1.5 tbsp olive oil

1 egg + 1 egg white

1. Place a large skillet over medium heat and add olive oil. Place in the sweet pot. ato noodles and season with garlic powder, salt, and pepper. Cook for about 5-7 min or until noodles have softened

2. Place the noodles in bowl and crack eggs over them. Stir to combine well

3. Take out 2 6in ramekins. Place noodles to pack the ramekin half way. You can use regular bowls too.

4. Place a piece of wax paper over the ramekins and push down to cover noodles. Now place ramekins in the refrigerator for 15-20 min.

5. Once they are done cooling, remove the wax paper. Place large skillet over medium heat with olive oil. Over the skillet, turn the ramekin over and tap the bottom until noodles come out. Cook the noodle bun for about 3-4 min in each side, until charred on both sides
